Maki-San Part-Timer Sans: Operations Checklist Pre-Opening Service 1. Check/Replenish cutlery counter 2. Check/Replenish packer area 3. Check/Replenish drinks chiller 4. Top-up order forms station 5. Place standing board(s) at designated place 6. Bring down the chairs and sanitise the tables 7. Sweep the floor (mop, if needed) 8. Check and keep the areas clean Roller 1. Daily check/taste/smell overnight turnover food items 2. Daily fresh prep: Slice avocado, salad, etc.… 3. Top up the sauces, essentials and sprinkles 4. Check and prepare standby food items in the front counter chillers 5. Fry items for lunch period Mid-Shift Service 1. Check dining area from time to time 2. Clear, clean and sanitise used trays on table(s) and on the garbage counter 3. Replenish dine in and take away sauces, cutleries and refreshments 4. Nearly arrange and tuck in the tables and chairs 5. Sweep the floor (mop, if needed) 6. Check and change the trash bags when full 7. Check/Clean/Replenish packer station 8. Do cashiering as and when needed Roller 1. Check and note down items balance 2. Top up standby food items 3. Top up sauces 4. Refill sprinkles 5. Top up RICE! 6. Clear and wipe the roller boards, close and clean fry station and respective areas 7. Regularly wash and clean 8. Sweep the counter floor (mop, if needed) 9. Involve in food preparation and frying
